Colts Neck library to host healthy cooking lecture

COLTS NECK – Health counselors Debbie Peterson and Wendy Bright-Fallon, the co-authors of “Nourish, a Community Supported Cookbook,” will discuss eating healthy from 2-3:30 p.m. July 18 at the Colts Neck Library, 1 Winthrop Drive.

“We will talk about the creation of ‘nourish coaches’ and our motivation to write the book to help get people back in the kitchen,” the authors said. “We will field questions from the audience and cover hot topics such as vegan vs. paleo, sugar substitutes, is soy OK? and our personal coaching style to help people thrive.”
Peterson and Bright-Fallon met in 2007 at the Institute for Integrative Nutrition (IIN) where they received their health and nutrition certifications. Peterson is a wife, mother of two and a retired college instructor. Bright-Fallon is a wife and former corporate executive.
“Nourish, a Community Supported Cookbook” second edition, contains 135 recipes of cooked, raw, vegan, animal and everything in-between meals, using no artificial ingredients or refined sugars.

Both women are integrative health counselors and said they are trying to make the world a healthier place.

“Being healthy is vital to everything we do,” they said. “Our day-to-day living deeply depends on how we fuel our bodies. One of the best ways to get healthy is to know what is in your food and the best way to do that is to cook it yourself.

“Eating right for your body is the single most important thing you can do to ensure a vibrant, healthy life. We are what we eat, how we move, and what we think.
