Zoom in and enjoy a glass of wine or arak as Carole cooks an authentic Iraqi Shabbat dinner. Take a Magic Carpet Journey to ancient Babylon and Baghdad and enjoy the Ta’am, the special tastes of Jewish Iraqi cuisine dating back thousands of years. These tastes include sweet and sour fish with squash, Salouna; stuffed chicken baked slowly with ground cardamon seeds and surrounded by rice, Tabeet; and a light, delicate rolled cookie infused with rose water, Malfuf.

 

Come on this culinary journey with Carole to the place of her ancestors for over 2700 years and where she has traveled six times! Carol will also show short clip from her latest documentary, “Saving the Iraqi Jewish Archives” which she made along with co-director, Adriana Davis.

 

Carole Basri has taught cooking classes at the 92nd St Y and contributed a chapter on Iraqi cooking to their International cookbook. Carole has also taught cooking at the Spanish Portuguese Synagogue in New York City, Sephardic House and the American Sephardic Federation. She is currently working on her own cookbook.
